Please email us at kookoolan@gmail.com, or call us at 503-730-7535, or talk to us at the Hillsdale Farmer's Market, to enroll for any of these classes.  You may pay by check or cash on the day of the class.  All classes are $50 and this includes $10 toward the purchase of anything we sell.  Most classes include additional items, these are noted below.

We offer home cheesemaking classes approximately three Saturdays a month.  Different instructors, different demonstration cheeses, different special topics and techniques every time.  But they’re always Saturdays 1-4pm, always $50 per person, always course fee includes a $10 coupon good toward anything we sell, plus a truly spectacular cheese tasting plate, with the cheeses relevant to day’s topics.

 

 

 

 

 

 

 

 

Basic hard cheesemaking class on October 4 taught by winemaker Rudy Marchesi of Montinore Estate Vineyard with Asiago as the demonstration cheese, ageing cheeses as the special topic, and Italian hard cheeses and aged cheeses featured on the tasting plate plus a bonus wine tasting of several wines from Montinore Estate. 

 

 

 

 

On October 18 science fiction author and county fair cheese judge Mary Rosenblum will teach a basic hard cheesemaking class featuring cheddar cheese as the demonstration, the Cheddaring Process as the special topic, and an assortment of young and old, “straight up” and flavored cheddars.  Mary tends to emphasize the science and biochemistry of cheesemaking more than the other two instructors.

 

Saturday Nov 1, we are offering a basic soft cheesemaking class.  This is a perfect introductory class for the hobby cheesemaker or anyone interested in how cheeses are made.  During the class, several demonstration cheeses will be made from both goat milk and cow milk, and we'll talk about how to flavor cheeses with herbs, vegetables, and fruits, and how to use soft cheeses in recipes.  The instructor is local cheesemaker Scott Catino of Gaston, Oregon, who is about to launch his own brand, Quail Run Creamery.  Scott (who prefers to use his cheesemaker name "Dominic" when he's making cheese) makes the best chevre I have ever tasted, and he’s very personable and a great teacher as well (in his day job he teaches Technology at Gaston High School).  The cheese tasting will feature three of his absolutely outstanding cheese varieties, plus local and imported goat cheeses, soft cheeses, and hard cheeses.

ABOUT THE LOCATION:  Kookoolan Farms is a diversified, small family farm in Yamhill, Oregon.  We raise chickens for meat and for eggs, cow and goats for milk, and we offer a full line of cheesemaking ingredients, cultures and supplies from the New England Cheesemaking Supply Company.
